Buttery Welsh Cakes
Ingredients:
- 450g of organic plain flour
- 170g of organic caster sugar
- 1 teaspoon of mixed spice
- 1 teaspoon of baking powder
- 150g of our rich and creamy Organic Herd Unsalted Butter
- 100g of organic currants
- 1 organic egg
- A splash of organic milk
Method:
- Begin by combining the organic plain flour, organic caster sugar, blend of mixed spice, baking powder, and a pinch of salt in a bowl. With gentle fingers, incorporate the rich and creamy Organic Herd Unsalted Butter until the mixture resembles delightful crumbs. Introduce the organic currants and gently mix.
- Work in organic egg until a soft dough forms, adding a splash of organic milk if needed to achieve the perfect consistency.
- Roll out the dough on a lightly floured work surface to the thickness of your little finger. Use a 6cm cutter to cut out rounds, ensuring to re-roll any trimmings to minimize waste.
- Grease a flat griddle pan or heavy frying pan with organic Unsalted Butter and place over a medium heat. Cook the Welsh cakes in batches for approximately 3 minutes on each side until they achieve a glorious golden-brown hue, crisp exterior, and are cooked through.
- Serve these delectable Welsh cakes warm, either with a slather of Organic Herd’s delicious organic butter and jam or simply dusted with organic caster sugar. They will delightfully remain fresh in a tin for up to 1 week after St. David’s Day!
